MOROCCAN CHICKEN TAGINE - RECIPE

My first recipe for you: a Moroccan chicken Tagine. A dish full of flavor, ready for the whole family to enjoy.

My wife traveled around the world and she picked up this recipe along the way.

I prepare it a few times a year for my family and they love it. It is a very easy recipe with lots of flavor.


I hope I have inspired you with this first dish. In this recipe I’m using chicken and olive oil from “Huntsman Game”. They sell wonderful meat kits.


You can use a tagine pan or a Dutch oven. If you have neither, you can just use a pan and then let it sit in the oven.


The preserved onions are key to this dish. They are full of flavor and add an extra dimension to the recipe. You can make them yourself, but I used some from the Iran supermarket.

Prepping time: 30 min

Cooking time: 1,5 to 2 hours

INGREDIENTS


  • 2 tbsp olive oil

  • 1 whole chicken (Huntsman Game)

  • Salt & pepper

  • 4 tbsp butter

  • 4 gloves of garlic (finely chopped)

  • 2 medium size onions (finely chopped)

  • 2 bay leaves

  • 1tsp ground cumin

  • 1tsp ground cinnamon

  • 1tsp ground paprika

  • 1tsp ground ginger

  • 1/4 tsp saffron

  • 2 cups chicken stock

  • 2 preserved lemons

  • 1 large carrot

  • 1/2 cup cilantro leaves

DIRECTIONS

  • Take the Dutch oven or pan and add olive oil. Put it on a high heat

  • Season chicken with salt and pepper

  • Cook chicken in oil until lightly browned on both sides, transfer to a plate, set aside

  • In the same pan (tasteful reduces), add some butter

  • Add the finely chopped garlic and onion, stirring until soft

  • Add the mix of spices (cinnamon, ginger, paprika, cumin), the saffron and bay leaves

  • Cook and stir for about 3 minutes

  • Take the stock and add it to the pan, let it come to a boil.

  • Now add the fried chicken again along with the lemon and carrot (you can add olives or dried apricots as well, as an extra ingredient)

  • Reduce heat to simmer and cook covered until chicken is cooked tender

  • Stir in cilantro and remove from heat

  • Serve on a couscous
